Make-A-Meal-Of-Em Oatmeal Cookies

I have been dying for a good oatmeal cookie lately.. unusual since I ordinarily hate them. After scouring the internet, I came across a recipe that seemed to get some pretty good reviews. I used parts of it and changed others to accommodate my ingredients on hand and to make it just what I was in the mood for, and came out with this awesome cookie!! I made mine with splenda to cut back on the sugar, but you can swap it out for sugar if that's what you prefer. :) You could also swap out craisins for raisins, use different nuts, or maybe use m&m's in place of the chips. Here's what I came up with:

Make-A-Meal-Of-Em Oatmeal Cookies (makes 36 cookies)
  • 3 eggs, well beaten
  • 1 teaspoon vanilla
  • 1 cup craisins
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 cup splenda
  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 Tablespoon baking powder
  • 2 cups quick oats
  • 3/4 cup chopped pecans
  • 1/2 cup semisweet chocolate chips
  1. Combine eggs, vanilla, and craisins. Let rest for 1 hour. Do not skip this step!!
  2. Cream together butter and sugars.
  3. Add flour, salt, cinnamon, and baking powder. Mix well.
  4. Mix in egg/craisin mixture, oats, pecans, and chocolate chips. Batter will be very thick.
  5. Drop by heaping tablespoonfuls onto baking sheet.
  6. Bake at 350 degrees for 10-12 minutes.

If you're interested: These cookies (when made just like the recipe) are 5 weight watchers points each. The entire batch is 180 points, so if you don't end up with 36 cookies, you can easily figure out how many points your cookies are. :)
